It's about time!! You been slacking on me Beli. Been missing you post. That looks great and is saved under "favorites"!! Got to do some fish after the cook I did today! Wish I was down there. Fall has hit South Arkansas. High today of only about 78 and low of 57. Been cold all day. Had to wear leathers and full gloves to pick up the stuff for the cook this morning.
-
WOW, as usual. Tell me you baked the cheescake on the egg?!

Ok I'm stumped, How did you do the vanilla ice cream on the egg????

Beli,
Awesome as usual. I'm going to Queretaro this coming Monday. If you will still have me I would like to fly up to Monterrey the following Saturday. I am still unsure as to whether my customer will be ready but they say they will.
If the invitation is still open, let me know if you need anything. I am still trying to find some Alder planks. Mike has a package for you that I plan on bringing.

Beli! That looks great. PLEASE tell me about the POBLANO SLICES & CREAM. I'm going to have to try that salmon! Muy Bueno, mi amigo!
-
Sure my friend. The Poblano Slices & Cream is a very simple and tasty dish:
1) Put Chiles directly on the fire turn the around 'till the skin is darkened
2) Remove and place them inside a plastic zip lock bag for 1/2 hr.
3) Wash in cold water and remove skin
4) Open Chiles seed & devein them
5) Cut in long thin slices
6) Add fried onions, white Cheese squares,sweet corn, cream, S & P.
Can have them either Hot or Cold. ENJOY -

I hope you don't get in trouble for giving away your wife secrets. I'll be trying it soon. -
  Hope not Tom...you can imagine....this is actually my Mother in Law's recipe...then I would really be in BIG trouble. :pinch:

Beli,
Thanks for your recipe on salmon. I'm a novice on the BGE but have cooked the best tasting ribs, chicken, steaks, and rack of lamb that I've ever had. Still looking to improve my pork and fish. I took a step last night on the fish with your recipe.
Heated egg to 350. Didn't have time to soak planks and only marinated for 20 minutes. So I placed lemons under direct salmon (thanks to all who recommended that)until internal of 140. One salmon got a heavy rub of Raging River, the other the BBQ sauce, maple syrup, brown sugar, and pepper flakes.
The BBQ/Maple/BS/Pepper recipe won hands down. My wife and 12 year old daughter loved it. I thought it was excellent too. Great recipe to get kids to eat fish because of the sweet flavor of the sauce. Looking forward to kicking the heat up next time with more pepper flakes. -
I've done your salmon recipe before and it is delicious. But I am going to have to try the poblano dish tonight! Sounds it like it would go great with steak.
