Did the second sirloin tip roast

Morning All:

Did the second of the two sirloin tip roasts I got out of that whole roast a few weeks ago. This time instead of the rice, I cut up a couple of baking potatoes we had, added some carrots and onions and put the pan under the roast.

Sliced the roast nice and thin...

and the veggies had a nice beef flavor from the drippings...

A lot drier cooking tonight as no rain...Friday evening I did some burgers in the rain and had to use the umbrella...
