How to Egg a HATCH!?

most people hatch an egg but i just got 25 lbs of HATCH green chilis today and will be posting pics this weekend.
I am starting tonight with beer brats with green chili and onions, green chili stew, tomorrow smoking 10 lbs with cab sav grape root(i hope it's not the vines they use for BOXED wine.....) and walnut, sunday green chili chicken enchiladas.
the Hatch chili festival is next weekend in NM so this is the next best thing until i get back in October.

I roast them with a weed burner. Quickest way for large quantities.

OMG I am soooo jealous. I have wanted to go to the Hatch Chile Fest for the longest time and have never been able to work it into my schedule. I order my chiles from New Mexican Connection and they are usually pretty good. Pleasesend any recipes you do. I would love to give all of them a try.
