I know there was a post recently about this but my sister is cooking these tomorrow at the Denver fest and I would like to know what they are. She got them at Costco and they are packaged 6 steaks to a pack at 2.5 lbs. They taste good but have a springy texture. I'm not sure the best way to cook them, but I'm guessing direct pretty high heat, any ideas? -RP

Mollyshark asked that question 'over there' and no one had any idea except that someone had heard they were packaging some new cuts of pork.
Haven't seen any around here yet. -
Certainly not at a fest, but what about curing them a week or so and then making buckboard bacon.

sear followed by a long braise is needed to tenderize those cuts of meat. any number of recipes would be excellent, but they will all take time.
