Half Turkey

Anybody got any good instructions (or photos) for cutting and turkey in half and a recipe for how to smoke the half on the egg? I have several turkey's to cook for a charity for the holidays and I wanted to do them in halves -- so I'm going to cook one now as a test run. Thanks.

Well, I suppose you could half **** the turkey's just like chicken. Go here to see:

if you haven't bought them yet just have the vendor where you are buying them zap them on their meat saw and wrap seperately.
if you already have them it is easier to start with the back and then the breast bone with a good pair of shears.
ccok the same as a whole bird about 350ish indirect to an internal of 165 plus. i just did one last night for sandwiches but didn't take any pics
