Our youngest daughter just gave us a new baby granddaughter. That's 5 grandchildren now. Do we feel lucky! Claudia and I are heading to Columbus, OH Monday morning to greet our new baby girl. Meanwhile I continue to read the EggHead forum daily. You people are killing me with your great meals. I have learned so much since joining this group.
We only have a month until we return home to AZ and buy a LG BGE. I couldn’t stand it. Today I bought our future LG a baby sister. Jason at the Fireplace Shoppe in Northfield, OH has been really good to me. I have been in their store too many times to count this last two months. Today he made me a deal I couldn’t pass up. I promised my wife I’d make something special for our first cook. I’ll do a post on that tonight.

I use my mini most every evening after work. I did 4 Chicken thighs for the wife and I tonight. Last night was a 2 lb center part of a Boston Butt that I used tender quick on to make cured pork butt. I used the outside part of the butt for sausage that will go on the mini egg Saturday for lunch. I plan on firing up the large for a 5 lb pot roast for Saturday dinner.

Congrats. I love all 6 of our Grandkids but I'll trade the mini schnauzer for the mini egg. Post response quick before the wife see's it or the trade will be one dead husband :( :laugh:

tonight, on my mini, i cooked grilled speckled trout and fresh asparagus with melted mozzarella. i also made some chicken kabobs that i plan on cooking on my large on sunday with some grilled corn and probably some chicken wings. -
