have not done a pork loin before, so here I go 350 indirect. should I use the plate setter or adjustable rig with a pan? I know I will be higher in the dome with AR but I don't know if that is good or bad on this one. Any advise would be appreciated

Either will work fine. I did one direct to 150 internal and it was also great with a nice crust. now tenderloin is different.

I like to stuff them and indirect high 350 pull at 140-145F. Like drip pan so the grease does not burn and negatively flavor the meal.

No this is a loin, I do the tenderloins direct but today if the weather co-operates I want to try indirect never had it before.

I do mine on a raised grill with a pan under the loin. hope this helps see pics below. JD
