This forum keeps coming thru big time on requests for advice, so here goes again - and thanks.
I am making a whole 12.5# turkey this weekend. I don't have a vert roaster so might use v-rack, advise and reason? - indirect - drip pan - 325-350. Will use a homemade rub and thinking about an injection. What's a good rule of thumb time wise? Ideas about an injection? Should I put anything in the drip pan? Will use a mild smoke early but not looking for a heavy smoke taste.
Thanks,
Don

at 325 mine go about 12 minutes, i think the rule is 15 minutes a pound. madmax has a great writup for turkey on the naked whiz site, no injection but it makes for a great gravy that compliments the smoked bird. i go with a light pecan smoke with turkeyfukahwee maineyou can lead a fish to water but you can not make him drink it

Before you use this method be very sure you will enjoy cooking turkeys frequently. Since the extended family first tasted a bird from the egg using this recipe, it seems someone is always begging me to serve one up every few weeks.
If you do take this plunge, then go ahead and swim in the deep-end......make the gravy!
Good luck. -
Thank you for all the advice. I will make sure that gravy is on my to do list.
