I've got 2 free weekends coming up where my dear wife will be out of town and my to-do list and social obligations are pretty minimal. I plan on doing some serious Egging, the only question is what should I put on the menu?
I'm looking for ideas on recipes that you always mean to cook, but never have the time. Since it's just me, it's also should be meals that can easily be frozen for later.
The short list right now includes tacos al pastor and a new baby back rib recipe.
Any other suggestions?

Quesadillas are great when done on the BGE.
I made this with chicken I had done on the BGE earlier
They are easy to do and taste great
I set it up just like I would for pizza. Platesetter legs down, three ceramic feet and pizza stone. I preheat for about 20 minutes at 420 degrees and then slide the quesadilla on the pizza stone using a pizza peel. Then I just watch until it starts browning.

Isn't there anything that you like that the wife doesn't? For me it's fish and lamb. Grilled lobster is simple and tasty.

Pig Candy..This can be used for all sorts of things.
Fatties..Breakfast sausage and maybe even a hot one.
Bacon wrapped scallops..Enough said.
Ho-dag cookies..Search the forum and you'll get the recipe.
And like someone else on the thread said.."Anything your wife doesn't like that you do and never get to eat"

i would get a really expensive dry aged ribeye since your only buying for one. these might be something to try, lebanese meat pies, they go good with a jellied type chutney. even great cold

my grandmother used to make those lebanese meat pies.....never on an egg though.....

I can attest the traditional ones were great. There is also a spinach version....
