what is a good rub for pork?

    Magic Dust
    Makes about 2 ½ C
    ½ C Paprica
    ¼ C kosher salt, finely ground
    ¼ C sugar
    2 T mustard powder
    ¼ C chilli powder
    ¼ C ground cumin
    2 T black pepper
    ¼ C granulated garlic or garlic powder
    2 T cayenne pepper

    For a commercial rub for pork it's hard to beat Ken Stone's Witchy Red. Here's some info:

    Furthermore I tweak pork a bit more using Witchy Red plus a new product from Mrs Dogs called Chipotle Salt.

    In fact I'm readying a rack of baby backs right now with this combo, but we also like the combo on pork roasts and pork burgers.

  • For a commercially prepared rub, I have been using Billy Bones Competition rub. I've been happy with that for butts, ribs, and pork chops.

    Otherwise, I use the following one from the 1997 BBQ listserve Faq:

    1 teaspoon Garlic powder
    1 teaspoon Onion powder
    1 teaspoon Chili powder
    1 teaspoon Paprika
    1 teaspoon MSG
    1/2 teaspoon Black pepper
    1/2 teaspoon Cayenne
    1/2 teaspoon White pepper
    2 teaspoon Salt
    2 tablespoon Sugar

    I skip the msg, fwiw.
