This 24 oz bone in ribeye begged me to liberate it from the Publix meat case.
S&P, some olive oil and into the fire:

Man, I love ribeyes. Especially when they're done right, like this one.

It took about 5 minutes a side @ 400, then another 4 minutes of dwell at 300-350 after the Thermopen reading came up a little short.
I gave the meat as much time as I had to warm up on the counter, straight from the store, but it was still fairly cool. Another half hour on the counter(or a warm bath in a ziploc) would have negated the last bit of dwell time.
