Prime Rib....how long to cook

Hi all,[p]This is our first prime rib roast. I have gathered from posts that we should cook at around 350 degrees. We would like it medium rare, so should the polder read around 136 degrees? How long should it take per pound (ours is 4 1/2 pounds). Also, do we cook it directly on the grill or put it on a pan? Thanks so much!!!

    Crob,[p]Welcome to the forum and family of ceramic chefs! 350* is a good temp for Prime so figure 15-20 minutes per pound. This is best done indirect on a meat rack sitting in a drip pan which will also serve to shield the meat from the direct heat of the coals. Pull the roast at 130* internal and allow to sit for 20 minutes or so before serving. The internal temp will continue to rise and should provide the med/rare you are looking for. [p]Enjoy[p]K~G
