Geoduck suggestions
Options
For Thanksgiving, I plan to egg-up some geoduck for my family. I was wondering if anyone here has ever done anything with it, and, if so, could you offer up some ideas/recipes?[p]I plan to serve it with Mexican cornbread, livermush and some garlic mashed potatoes but I am open to suggestions. [p]Thanks

Stump,[p]Are you going Geoduck hunting? I remember seeing a Discovery Channel "Dirty Jobs" episode showing how they are farmed, harvested and cooked.

Lost in Utah,[p]I wouldnt even know where to start hunting for those things. I am getting them through a local fish place here in town. I placed the order back during the summer. [p]Someone I talked with said he cooked some on his egg and it tasted a lot like carp. Im looking forward to it

Stump,[p]Don't forget the Crowbar![p]I am really showing my age, Geoduck and Crowbar were two charactures from the old "Ma and Pa Kettle" movies.

Stump,[p]I've never cooked or eaten them before, but I don't think you cook or grill them like other clams. The best I can recall from the Dirty Jobs show is you first cut away everything but the siphon end of the clam, you skin the siphon, slice it fairly thin, then cook it quickly by poaching or searing it.

Stump,[p]I found that the best way to prepare Geoduck is to pound it out flat before cooking, otherwise it will be to tough. You'll need to pound it pretty hard. I find that geoduck pairs well with rutabagas or other root vegetables.
