Pizza sticking to the peel

I got into pizzas on the egg about two months ago. I'm having a problem with the dough sticking to the peel. I dust the peel with lots of flour and the dough slides nicely. But by the time I add the sauce, cheese, and toppings and I bring it to the egg and I try and slide it onto the pizza stone the dough has stuck to the peel. Now I did get a metal peel, don't know if that's the problem. Any suggestions?


  • Use corn meal on the peel. It won't gum up like flour.

  • as mitch said, use (a liberal amount of) corn meal instead of flour. also, as i am building the pizza, i give the peel a quick shake every now and then to make sure the dough doesn't start to stick.

    Ken, use cornmeal instead of flour. It will work much better.

    As an alternative to cornmeal which will burn on the pizza stone if your cooking multiple pizzas try kosher salt.

  • Big Hound, I followed someone's advice to try parchment paper, and it works great.
