fat in the butt

just pulled my first butt. i guess i was expecting that most of the fat is rendered away after a long low and slow cook. after a 13 hour cook of a 7# butt i discarded a good pound of fat. is this normal? did i just get a butt with an unusual amount of fat? by the way, the meat had a very greasy taste as well. much unlike i have ever had professionally cooked. [p]regarding the prep. i did not inject the butt, but merely rubbed with some mustard and salt and pepper. i removed the majority of fat from the exterior of the butt. once again i cooked the thing for just under 13 hours at a very constant 240 dome. let it rest for an hour in foil and towels in the cooler prior to pulling.

i removed the butt from the egg at an internal temp of 195 - 200. i measured with a thermapen and got a reading of 195 in one spot and 200 when taken in another spot of the butt measured moments apart.

Maybe you pulled it to soon internal temp should be at least 195 to 200 to render the fat. And some meat just is fattier (is that a word?)

mike,[p] Did you cook this fat cap up or down? I usually see this greasy taste remark when people cook with the fat cap up. The only times I have had noticeable fat on a butt after a cook has been when I did try the fat cap up approach or the temp was too high during the cook.[p][p]

i trimmed away the majority of the fat cap prior to the cook, leaving only a very thin layer. also i cooked it cap side down.[p]btw, the majority of the fat that i speak of is what i noticed from the inside butt as i was pulling it, and not what was on the exterior of the butt.

mike,[p] 7 pounds at 13 hours sounds about right. I will have to say like AZRP mentioned - Some meat has more fat then others. Seems to me you got one of those. [p] Where did you purchase this butt?

mike ,[p]Well there is a reason "Giggied Gig off to the market to buy a fat pig" exists [p]When I buy Pork Butts from Sam's, BJ's or Costco I try to keep the total weight under 14 pounds total. The ones I cooked yesterday were 13.48 total. I didn't trim them and there was very little fat left.
