<p />The local Safeway had ribeyes w/bone-in for $5.99/lb. I couldn't resist. I got the butcher to cut some 1 1/2 thick ribeyes and proceeded to prepare them via the TRex Method.[p]They turned out very nice. The only thing different I did was I didn't have any mesquite chunks so I used oak chunks instead. It gave a nice smoke flavor in every bite. I had a religious experience while eating my steak! My wife enjoyed hers as well.[p]The papers underneath the plate are TRex's directions. I am glad no juice got on them!

    TomCPA,
glad you enjoyed them. rib eyes are the steaks of steak.[p]....you should see my printout of the naked whiz's directions for the paella cook. schmeared and blurred and ruined beyond readability. but the paella was perfect.
