New Owner - temp too high

I am a new owner, and I cannot seem to get a steady run at 220-250. I am using the cast iron unit on the top and if it is open even a crack and the bottom draft likewise, temp goes up to 300. Close them and it goes out. Is there some other technique I am unaware of? Thanks everyone for any advice.
