A new Sam the Cooking Guy popped up on my Youtube feed and it features Tri Tip. He starts out by saying people sleep on Tri Tip. I assuredly am not in that camp so I was already excited for a new way to eat it. SRF just shipped me four Tri Tips so I was ready to go.
I ate two enchiladas, which was likely a bit too much. I kept saying, wow these are heavy duty throughout dinner.

I made too much of the meat/onion mixture for the size of my cast iron pan. Five enchiladas worth instead of 8. So, 6yo got a helping of the meat mixture, mixed in with some pinto beans for breakfast. Kid is such a champ eater.Mountain View, CA

Look, whatever you do, just make the dang salsa. I use this from Rick Bayless, which is more or less what Sam does here (Rick's is better, I'd think).
