Tonights Meatloaf

Did a half pork, half beef meatloaf tonight. About 3 pounds or so had DP Cow Lick on the inside and KC Masterpiece rub on the outside. The KC gave is a sweet peppery flavor that went great with the slight heat of the Cow Lick.

    1 cup meat
    1 cup loaf[p]hehehehe[p]i'm just joking
    that meatloaf does look fantastic

    Thats kind of tough I never measure when I make a these are just a guess.[p] this on had:
    3 Lbs meat (pork and beef in this one)
    1 med onion chopped
    2 stalks celery chopped
    3 cloves garlic minced
    about 3 tablespoons DP Cow Lick
    1 egg
    about 1/2 cup Italian style bread crumbs
    about 1/2 cup V8 juice
    Mixed altogether, shaped, covered with KC Masterpiece BBQ seasoning and cooked on a 350 egg on a raised grid unitl about 170 using Guava for smoke.

    good idea to use expanded metal for a grate, rather than buying a wire mesh meat loaf basket. i've seen them on the web but i'm too cheap to buy one!
