Pre Fourth BBQ

Had some friends over yesterday, as they had plans for today. Decided to do a pork loin.


Butterflied and stuffed with spinach, feta, mushrooms, sun-dried tomatoes, and bacon.  Because what is better with bacon wrapped pork than bacon inside?



Two and a half hours at 300 degrees. Forgot to get a shot of it on the Egg.  

And finally, the money shot. Cheesy mashed potatoes, and Blue Lake green beans cooked in (what else?) BACON!
