chicken breast as a by-product cook

Yesterday I egged a rack of spares and while I was at it I threw on a large chicken breast.

Tonight I sliced that breast thin and then made this salad entree for our supper. Trust ME it rocked!!!

  • I love it: by-product breasts.  We have these several times a month as a by-product of leg quarters!  Great for pasta dishes, sandwiches and salads.

    I did the same thing last night. I love a good vinaigrette or a simple oil and vinegar dressing.

    No...a Paul Newman Raspberry Walnut vinaigrette. Please give me a great homemade one!

    Gorgeous colors @ RRP.  Love salads with
    1) a little bit of a healthy “sweet” to balance out the acid
     strawberries are a great choice for that
    2) any of:  pecans, walnuts, pumpkin seeds, pistachios, almonds, pili nuts

    Added to your killer chicken breast technique and you have the perf salad. 

    Took my first post-pandemic 4 hr flight. Made a decent pre-ordered salad pretty good for an airline salad  by bringing 
    - diced up Turkish figs for the sweet 
    - a package of chili-garlic Oloves 
    - pumpkin seeds

    Thanks, but if you look closer you will see chunks of English walnuts. I was going to add pecans, but since the dressing has walnuts as an ingredient I went with the walnuts to enhance the already present flavor.
