Took me a while to get these here- Strong storm Monday night and work travel (yes on a plane) this week.
Started Saturday
Seasoned the Butt
Made the Mojo
After 2 hours on its own- into the Mojo
~6 hours later Carnitas, they went into the fridge as is.
Warming up Tortillas for next step
Prerolled meat only ~25
Final product shared with friends at the neighborhood pool

Looks fabulous. Something you might try: chunk up the butt before seasoning and resting, smoke in a pan. Flavor gets more intense with more surface area. This may not suit your taste buds, but it works for us.
