Pulled beef

I happened to have a chuck roast (3.4lbs) and someone posted their try at clay q’s bbq beef. As soon as I saw it, I knew I was going to have a go at it.   

Did not use any oil and I seasoned it the night before with garlic and onion powder and salt lick bbq rub  

Put it on top of metal skewers in an aluminum pan with some water.  Smoked it at 225 to 250 until it hit 170 internal
 

Pulled it off and then it went into the Dutch oven with water and maple syrup.  250 to 275 until it hit 210.  

Shredded it, added some Stubbs bbq sauce and back on uncovered for an hour.  



Served it with some black eye peas and Lima beans and pickles. It was fantastic and the family and I loved it.
