Chicken is a big weakness for me, I can cook about anything else. The real question when I cook chicken is skinless versus skin on.

Maybe a little more work than you want, but Spatchcock that puppy and then cut it up to your liking. Both bones and skin will add to the juiciness of the breast.

It's probably not my preference but it's almost always boneless chicken. Easy and can be turned into other meals/lunches without much thought.
