Pork Char Sui (keto friendly)

Being both quarantined and now keto, I’ve been egging way more in the last few months than I have in years. Bought the 4 pack of costco pork sirloin tip roasts because of the impending meat shortage, then had to figure out what to do. Decided to try to recreate a pan-Asian pork char sui I had several years ago in one of those basement food courts in Honolulu. I found a keto friendly marinade, cut the roast in 1/2, then indirect at 225 with some cherry chunks until I stalled at 139. Cranked the heat (using my new toy, the billows) and pulled at 142. Served in lettuce wraps with coconut cauliflower “sticky” rice and an Asian inspired cabbage slaw with Radikon Jakot 2006 “orange” wine. Spicy, crunchy, sweet, sour, delicious.
