Cooking for a small chili cook-off this Saturday. Thinking about adding some smoke to it. What's the best way. I just don't want it too smokey.

You’d be amazed what smoking your peppers ahead of time to the point of being dehydrated and then rehydrating them and adding the liquid mix into your base will add for smoke if you’re not able to smoke the meat ahead of time

Chipotle in adobo will ad a nice earthy smoke taste
Couple things I have learned that will help you in chili cookoffs .....Make your own chili powder or adobo ( I prefer adobo as I can strain off the skins )...make your own beef stock if allowed watch the salt level, it all adds up as you add ingredients

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Congrats on bringing it home. What "smoke" process did you end up using?
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
