Mad max with dry brine

Late to post but was thrilled with the results of my most recent bird. Went with a dry brine and mad max technique hybrid this year and will do the same moving forward.

I did the same and was very pleased. Used a dry brine with herbs and citrus. The citrus was an interesting touch with the rest of the flavors from Mad Max.
