Reversed Seared 2 Prime Tri-Tips last night. Found a recipe for Authentic Chimichurri sauce which really paired well.

Great looking piece of meat. I'd probably nosh it in sandwich form, probably from my first intro to tri tip in Santa Maria, CA. The chimichurri looks spot on as well.(now only 16 stone)
