I just leaned of these little things.
Looking for a great tried and true recipe to get the authentic southern experience.
Yes there are recipes online but who better to ask than guys/gals from the south.

Only time I ever made them was in grade school as a project. Pretty horrible as i recall. That was A LONG time ago. I am interested to see what comes up here though...

Mix up your favorite cornbread then drop small pancake size batter into skillets with hot vegetable oil, app 400 degrees. Flip as you would pancakes. Really good with a little peperjack cheese and crushed red pepper in the batter.LBGE, and just enough knowledge and gadgets to be dangerous .

There is a restaurant in Florence, SC (lived there for a short period), Tubb's Shrimp and Fish Co. They have Hoe Cakes on their menu. First time I've ever tried and only time I've seen them in a restaurant. Their entree was Cornmeal Pancakes, Shrimp, Smoked Jalapeno Cream Sauce, Sunny Side Egg, Bacon. Quite filling and ya know...bacon.

Yeah I have lived in GA my entire life (which is longer than I care to admit) and the first time I heard of these was watching True Blood (takes place in Louisiana) so I assumed it was a LA thing. They do sound pretty good. I have never made them before, but using my instincts tell me they should be fried in bacon grease.
Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
We made them when my Mom found out that the oven was broke after mixing up corn bread batter. I told her to just fry it like pancakes. So she thought a bit, thinned the batter with milk and did so. Good with butter and pancake syrup.

Of course there is a story that goes along with the origin of these. They were not gourmet fare and were very plain, basic nutrition. Bacon grease makes everything better though!
