Enchiladas...How I do them

Wife requested some chicken enchiladas this week. I must oblige to her requests if she actually asks for something specific. Started the morning by smoking a chicken. Didn't season it heavily because I mainly wanted the smoke flavor for the chicken.
After it cooled I shredded it up.
Next it was time to make the sauce.
Time for assembly. I am lazy and layer it like a casserole instead of rolling individual enchiladas.
These will go back on the Egg soon at 350-ish for 20-30 minutes. Finished pics to follow.

I don’t think I could’ve resisted that chicken. That skin is really done looking. At the least that bird woulda been nakid when I shredded it.
The final product looks great too. Guess your resistance paid off. -
