Cures Bacon question. Help please.

Once I smoke the bacon, how long will it keep in the fridge ? I need it to last a week before I serve it. Or should I just freeze and thaw ? Thanks

When you go to slice it, flash freeze it for about 20 minutes. It will slice much easier.

Great tip there by @HarveyLytle But do not go by time - go by feel. You want the bacon so that you can flex it, but only by force. Length of time will be determined by your freezer. Additionally, I put mine on a cookie cooling rack for even chilling- not to mention it is easier to take off once starting to freeze.--------------------------------------------------
