Pork ribs are my wife's favorite, so I thought I'd give them a go yesterday for the first time since I had a day off from work. I read all about the 3-2-1 method, but decided to go with Meathead's recipe on amazingribs.com for this first time. Picked up some pork spareribs from the local store and dry brined for two hours. I got the egg going at 225F indirect. Used leftover home-made rub without any salt since I didn't want to double salt dip with the dry brine and the rub. About 6 hours on the egg and they passed the bend test. Mopped with a little sauce, direct heat for about 3 minutes per side. The Mrs and I were quite pleased with the final result.
First look
Rub
On the egg
After 6 hours
Mopped with sauce, 3 minutes per side
Back in the house
The underbelly picked up a little char from the 3 minutes direct heat

If you wish to send them to me, I will personally see they are disposed of properly. They will be placed on a plate and devoured accordingly.

Very nice job! Also, your Egg's interior looks so clean. Looks like it's coated with perfectly seasoned cast iron or something. Mine has soot flakes coming off the lid, lol. It's "Smokin Gal", not "Smoking Al".
