Reverse Seared Prime Rib

Picked up a little two bone prime rib roast on Friday to cook up for the girlfriend and my self. This was a first time cooking one. Will be doing this again.

I salted the roast with sea salt and let it sit in the fridge for 3 hours uncovered.
 Made a wet rub with fresh minced garlic, rosemary, black pepper, salt and olive oil. Drip pan with baby potatoes, a sprig of rosemary, half a white onion and a cup of beef birth. Cooked the roast @275 till I hit a IT of 120.

Took the roast off and set the egg up for a sear at 650. As the egg was coming up to temp i took the drippings and made a gravy. 
Sliced up and plated up! Turned out perfect. Definitely scored some brownie points for this one.
