Advice needed right now... Baby back ribs hit 6 hours and not looking/feeling right...
I have two full racks going. Indirect @ 250º for about 2.5 hours, another 2 wrapped in butcher paper, now waiting for them to finish unwrapped. It has been about 1.5-2 hours. And they are still stiff. Not flexing like they usually do by this point. Is something wrong? Am I over cooking them... or do I wait it out? Like I said this is feeling like it is taking longer than usual...

I’d check your dome thermometer. Sounds like you are cooking way low in temp. Is there any pull back on the bones?

Wait it out. They are not done. They should probe like butter between the bones with a toothpick or bend about 90 degrees. Is your thermos calibrated? Does seem long.

Yes. Starting to pull back slightly. Just does not seem to take this long usually. Might need to check the calibration on my thermometer after this.

That’s enough time and temp but they’re not done. Ramp up your done temp to 300-350 to the endpoint I mentioned.

What kind of instant read thermometer do you have? Maybe open the dome and insert the tip of the thermo and let’s see what your grid temp is. Next try very carefully to get a meat temp between the bones. Not a lot of meat so make sure your don’t push all the way through.
