I made Smash Burgers and Smoked Mac and Cheese tonight.
The Smoked Mac and Cheese was from Malcom Reed. The Smash Burgers, I followed Kenji from Serious Eats.

The awesome support of this forum made me want to try the mac and cheese again tonight. It held up reasonably well. I'd say it lost a few points as the cheese broke down a bit in the microwave (gasp) and the bacon/panko crust lost its crunch. On the plus side, as with all things I smoked, I can taste the smokey flavor even more the next day. I think it has to do with getting immune to the smoke while cooking. A shower, change of clothes, and new appetite seem to bring out the flavor for me.
