If you could only use 3 woods (chips, chunks, logs or pellets) which would they be and why?
I'm trying to decide what to stock up on. Hickory is definitely one but not sure of the other two.

Cherry and pecan. I would go with oak for the third.

Like your choice of hickory, it is a must have IMHO. A fruit wood is nice, but i like apple for flavour and cherry for colour. Pecan is also a nice choice.
If I had to keep it to three, Hickory, apple and pecan.
BTW mesquite is easy to get from some cheap lump, just mix it in with your regular neutral lump.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad! -

Cherry for beef and maple for everything else. If I had a third....maybe peach.
We sell a ton of apple and hickory, but i never use either.

Cherry and Pecan.

Everyone seems to like pecan. I used it in my last two cooks and it really puts out some smoke.
I have chunks and chips of cherry, oak, apple and pecan.
I have a pellet blend of oak/cherry/apple as well as a bag of hickory pellets to use in the Amazin-tube for my electric smoker.
I'm going to add a pellet smoker and a stick burner to my inventory this year so I'm trying to stock up on pellets and splits as I find good deals.

The three I use the most are cherry, hickory and pecan, probably in that order. I have some oak, but that's reserved for brisket. Cherry provides great color for fowl, but in all honesty, I'm not sure I could tell the difference in a blind taste test with any to the woods I've tried. Mesquite is the only exception I can think of. That was just offensive.Stillwater, MN

Mesquite. OG smoking wood and maybe sue you get big chunks, the small ones burn up too quickly.

My three 'go to' woods are sugar maple, black cherry and apple. I regularly get the black cherry and sugar maple from my source in Maine. Apple I can get at local stores. Although I might get a bag of it from the Maine supplier next time.I started using the black cherry and maple combination some years back. I find it gives a great flavor to everything. Plus it doesn't overpower the food, or become nasty if you go heavy on it. At least not to me. I smoked some Polish kielbasa for xmas day eats (requested by my sister of all people) and used those three woods for it. Was a HUGE hit.Large BGE with CGS Woo Ring, stone with stainless pan, Smokeware chimney cap, Kick Ash basket and Kick Ash can.Living free in the 603 (Pelham).

Post Oak, Apple, and Either cherry or Peach. The Post Oak for beef and the rest for pork and poultry. As far as what type it would depend on the cooking apparatus. With an egg chunks are fine. If it’s an offset then whole logs.
