12 lb Berkshire (if that makes a difference) butt been on at 225 for 24 hours and internal temp is 173. I need to leave for Christmas travel in about 3 hours. Will the cooking time pick up a lot once it’s through the stall, which I’m hoping is the case? Can I crank up the temp to 250 or something at this point without affecting the meat? Open for suggestions.....THANKS!

Bump the temp to 275-300. Wrap it with foil. Or, put in a 300 degree oven with foil.

Won’t that soften the bark by wrapping it?

It's a little bit late into the game, but I'd crank the temp up to 350. I have started cooking mine at 300 degrees. I can tell no difference in taste or texture.Tampa Bay, Florida
