Max, you were soooo right. The turkey is on and the gravy stock is on the stove, man, does this house smell GOOD! Had a time finding the fresh herbs but finally found a batch called "poultry bouquet" that had everything mentioned! Whew! I will be taking the turkey on the road tomorrow am... I plan to warm the turkey in the oven as you suggested earlier, but, should I save ingredients and make the gravy tomorrow just before dinner or make it today? Any words of advice are greatly appreciated.

  • wrobs,
go ahead and make the gravy today and take it with you . .. but also take either some extra stock or a couple of cans of chicken broth ... when you go to re=heat the gravy it may be too thick and need some thinning . .this way, you'll have some stock or broth to thin it with without diluting the flavor. .. .

    mad max beyond eggdome,
Thanks a bunch, Max! Turkey is/was 12 lbs and about done... the 12-15 minutes/lb is right on the money...
Thanks for everything you do... I look forward to meeting you at one of the eggfests...
BTW, good luck to Sidney and her college apps. My daughter is doing the same thing hoping to find out something in the next week or two...
Happy Thanksgiving to you and your family!

  • I have to agree, the house is smelling kind of nice right about now. I'll be getting the turkey on the egg in a hour or so.
