Tuscan Style Summer Dinner

seems Like Barbecue fever is in the air this week in the ATX. After watching @MNEggerandStuff get after it today I had sympathy heart pains seeing all that brisket!

Man cannot live on brisket alone so I made a little feast reminiscent of our visit to Tuscany last summer. 

Tuscan style chicken: Pasture raised chicken,  EVOO, salt, pepper, garlic, lemon zest

Farmer’s Market Zucchini and baby eggplant shaved, salted, grilled

Farmer’s Market arugula salad with watermelon radish, homemade lemon vinaigrette 

super fresh, simple, and I would put this up against just about any meal anywhere. The only ingredients bought at a the store were the EVOO, salt, pepper. 


Top: Tuscan Yardbird
Right: Arugula Salad
Bottom: grilled zucchini and baby eggplant

    I did. At a farmers market in a mall
    parking lot. I also just had $500 worth a wagyu delivered to my house by a guy in a Camry with his 12 year old daughter about an hour ago. It was originally slated for a parking Lot swap last night at the Loro dinner but he didn’t get here until this afternoon. There will be shady meat parking lot deals in my very near future.

    That looks really fantastic, but I can't be the only one a tad disappointed that you don't have a farm-to-table source for EVOO, salt and pepper.

    working on it! We do actually have local Olive Oil here and it's really good. I probably need to make that happen next Farmer's Market.

    The beauty is in the simplicity and allowing the high-quality, fresh ingredients shine through. Tuscany changed my world when it comes to food. Less is more, use good ingredients.

    I usually squeeze a little lemon over the chicken once it's done but we were using lemon vinaigrette on the salad so I didn't' this time.

    That's some good looking meat. How did you go about getting some guy in a Camry to deliver wagyu to you?
    It is a long and sordid story. He owns a ranch about 3 hours north of here but lives a few blocks away. He posted that he had some meat on a neighborhood Facebook site so I called him and we became instant friends. I bought like $800 worth of meat (for several friends and I) and that got his attn. I then gave him some of our fancy pig parts and that sealed the deal. Every time he slaughters a calf, he calls me and gives me a shot a grabbing what I want.

    Salad so nice we made it twice 



    Another simple but fantastic meal. This beef is really good. Meat. Butter.
