Grilled Short Ribs and Pizza

I decided to cook out tonight in spite of this ridiculous heat wave we’re having.
this is at 7:00 PM in the shade. 

I grilled some short ribs for an appetizer. They did not disappoint. 


After this we cooked a couple of pizzas. I use my standard sourdough bread recipe for the crust. The first is a classic margherita pizza. The next was “use up what’s in the fridge”. It had cheese, Italian sausage, and pesto.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Fantastic!  What temps do you find work best for your dough?  For me it seems like around 650 on the floor with an overhead flame like that is about perfect. Pizza takes maybe 2 - 2.5 min. If I get up to 700+ on the floor- even with a 00 dough- I can burn the bottom before the top is nicely cooked.

    You know, it’s interesting - I find the wood oven has a temp it “likes”. If I don’t push it, it seems to settle at about 600-650 on the floor as you said and the dome is usually 900ish. The pizzas are done as you say in 2:00 - 2:30 minutes. 
    Don’t tell her (shhhh), but my wife puts on too many toppings and the pizzas cook better if they take a bit longer.
