    Great looking plate of groceries right there.  Ribs look killer.
    Being lazy I am a big proponent of the toothpick test for the win.  Much less effort to determine the finish-line but however you get there is all that counts.  Enjoy!

    I love the tactile-ness of the toothpick test. But you can't remove ribs from the Egg with a toothpick.

    True that but you don't have to execute picking up the rack and guessing (before or after the finish bend)  when they they are finished.  Odds are most bend test rib cook tests are performed more than once per rack and cook but I have no data to support that.

     I don't wrap.

    These were around 4.5 hours total. The first 3.5 between 225 and 260. Then I bumped the Egg to 300-350 for around an hour. Wasn't keeping track of time too much. Just letting the Egg do what it do.

    Rockwood for fuel. Cherry and Hickory for the smoke. Sweet Baby Ray's for the sauce. First time using it. Not bad. Sweet for sure.

    One of my better rib efforts. Perfect clean pull off the bone as opposed to fall off the bone.
