Raw when I bought it cured for 9 1/2 days. Flipping and massaging it once a day.It's the cow that drives the meat!!

I am am curious as to why you cold smoked it? I smoke my bacon at 250+. Any benefits to cold smoking bacon?Pittsburgh, PA. LBGE

Why cook and re cook the bacon ..,,it's a safety factor but it you are using cure 1 cold smoke for flavor ...y...you are going to fry it to 160 later
