Long story short (I hope), I bought this piece of beef from a friend. He had a cow butchered and this was advertised as a beef brisket. It is not a beef brisket. My best guess is that it is a standing rib roast. I told my wife that I would try an S.O.S. on the BGE channel to see if anyone can decipher it. Let me know what you guys think. It is still thawing in this picture, and at the moment. I can see some bones in there, and in the first picture, there is a clear rib-like cut / dip in the beef. Anyway, this thing is getting smoked on the 4th, so one way or another, it will be as tasty as I can make it. Thoughts?

Yeah I’d say probably a plate/chuck rib section if those are pretty flat ish bones in the first pic.-FATC1TY

Idk, but I wish I had it instead of that piece of chuck I put on. Yours looks much better. Enjoy!

Hmmm, very hard to tell from the pics, but it appears that there is a run of bone sections along the top of the package in the middle pic. Do a search on "bone-in brisket." There's an article in the Texas Monthy that talks about them, and I found a couple of other shots elsewhere that seem similar. According to the monthly, bone in used to be the common cut, but were phased out because the bones tended to break early cryo-vac bags.

That is a brisket with the rib bones still attached.

Thanks for the input guys. I'm going to do a hot and fast brisket cook then. Too bad there is no way to be sure what it is, but given that the butcher labeled it as a brisket, that is probably what it is. Anyway wish me some luck on the 4th, and I'll post some pics thereafter.
