Cooking a brisket on the Medium tomorrow
Cleaned it out and got her filled for the early morning start. More photos to follow in the morning. First LS on the Medium. Have a 14.5# ( before trim) brisket to cook.

Looks good so far. So the meat is 1” longer, think I will be ok. I don’t have any bricks, a few good size rock but not sure it is needed. It will be full but as it cooks shrinkage will help. That’s what I am hoping for.Northern New Jersey

remember to foil protect any part that will be outside your heat deflector. And as the shrinkage takes over the protein will pull away from the foil. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Good call on the clean out. I do this every few cooks. Takes a few minutes and keeps air flow maximized. Keep us updated on the brisket! Remember, the cow drives the cook!

Started the Egg at 5:15 and at 6:30 the Brisket went on. Need to get the foil or the edges as mentioned above. Thanks again for all the tips. More photos to follow at the cook progresses. It’s my rainy day project you could say.Northern New Jersey
