Reverse Sear Tenderloin that works

only cooked this a few times and usually don’t get it right. Tonight I took my time and build 1/2 a fire and started the Tenderloin on the cooler side until about 120 or so. Took the meet off and Cranked up to 550 and put them back on right over the coals. 

Very happy with the the final presentation, even some tatters.
