First Cook

First cook on the new MBGE, passed down by a friend:  pork back ribs, low and slow.  You will note the sexy new Rutland gasket -- many thanks to Ron Pratt!  Cooked these as close to 250-275 as possible.  Seasoned with generic pork rub overnight, wrapped in plastic.  Cooked for one hour, flipped, cooked for a second hour.  Wrapped in foil, cooked for another hour.  Took the foil off and basted with two sauces.  Turned up the heat a bit just to cook on that flavor.  Rested under foil for a good 30 minutes.  Really good and most importantly, I learned a TON about this device on Sunday.  Not sure when the next effort will be, nor what -- spatchcock chicken, lamb, duck, or maybe just fire up some quick burgers.  But I'm going to figure this thing out.
