Butt Blast starts for us tomorrow.  Been trying to eat right leading up to the free for all.  N made the green bean-tomato-shallot side.  Delicious.  Cheers and safe travels to all.

I knew when I saw chimichuri it was going to be good. How do you prevent the fish from sticking to the grill? Is oil on the grate enough or do you have Jedi powers? I need to learn about turbo turbot and other ways of the fish before I hang out in Cali for a week and cook this summer.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Brother Sci, oiled grate, oiled feesh and patience.  When the fish releases freely it’s time to turn.  Embrace the fish. And don’t turn it before it gives you permission.

I could eat just about anything slathered in good chimichurri. That's a nice plate.

Thanks brother.  It was traditional Argentinian chimichuri.  As you said, good on shoe leather.  Great on turbot.
