Gonna be a great weekend.

Back from baseball practice.  Home alone(virtually, teenager in his room).  Got steak and potato. Volcano of goodness and about 20# of sausage to make. Oh and 8#! Of ground beef. Stay tuned.

    The recipe is pretty straightforward:
    • Go to a friend's house
    • Dump all his whole spices in the biggest skillet he has
    • Toast
    • Send his son out for more
    • Toast
    • Grind it all
    • Realize that you made WAY too much for the amount of meat you have (which is A LOT)
    • Use half of it
    • Mix and case
    All snark aside, it looks like you're off to a great start to the weekend
    (now only 16 stone)

    Scale (which one of my friends refuses to use)
    Friends with BGEs and myriad other fired devices (currently unavail IRL)

    After some thought since our masalawurst venture, I’ve come to realize that it’s like pizza and sex. There’s no such thing as bad masalawurst. Kinda like how dyspareunia is better than no pareunia. 

    Can be tweaked any any number of ways, depending on what you like.

    Loaf #1


    Have 5# of ground beef and 5# of spicy Italian ground(no pics) that I vacced up loose.  Still have 15# of meat to grind.  

    Brisket on the egg. Working on potato salad, baked beans and the other loaf.  

    Im beat.

    @caliking I diced the meat for 25# of sausage and ground 10#. Then I ran out of gas and baked two loaves and made potato salad and baked beans. There's a brisket on for lunch tomorrow. I'll finish the grind tomorrow.

    Had some tonight, and still love it. 

    Texas style beef fry is simmering on the stove (brisket smoked on the dishwasher, then cubed and simmered w onion and spices...with very spice forward notes). Bread is in the oven.

    and my best bread yet

    Still need to stuff the brats and chicken but I'm sofa king tired. Great weekend.
