This was a little riff from our Italy trip last summer. Very tasty.

Farmers market spinach and ricotta stuffed homemade ravioli with Marsala mushrooms and pea shoots topped with pasture raised porterhouse chops from up the road. The pea shoots and spinach were so fresh- they really made the meal. Pig was killer too. All came together nicely.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

me too and it was soooo fresh. Picked at 6am Sunday, bought 1pm Sunday, in my belly 8pm Tuesday. Same with the pea shoots. Makes a huge difference.
