And most importantly, because I like being married and owed SWMBO a top notch dinner after taking off on a hunting trip with the guys during Valentine’s Day.

Indirect at 275 till 105 internal. Pulled. Removed PS. Cranked heat to 700. Back on for the sear. Sliced, sprinkle of kosher salt. Nailed it. Now, back to my bourbon and shovel. Thanks for looking.

    100 miles can make a huge difference. Wonder how many are scratching their heads over "packy run"? Hey, when you're out, you're out. =)
